Duties / Monitor Sanitizing Practices and Procedures (corrected on site) Observation: Employees are not properly sanitizing cleaned multiuse equipment and utensils.Please repair the faucet at the large prep sink in the back room by the time of the next inspection. Provided CFM with copies of Employee Health forms to be used for newer employees. When it is time for storage of the food, then it must be fully covered. A reminder: it is ok to leave a food uncovered while the food is cooling. It is noted a cooling process is in place in this establishment. The purpose of today's inspection was to conduct a risk factor assessment. Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas. 3 light bulbs are out in the food prep area. ![]() Lighting Intensity/ Food Prep Area / 50 foot candles Observation: Observed that inadequate lighting was provided in the food preparation areas.Correction: A plumbing system shall be maintained in good repair.
